Where It All Begins
Bihar produces over 90% of the world's Makhana — and for good reason. The shallow, mineral-rich wetlands of the Mithila region create the perfect conditions for the Euryale ferox plant, whose seeds are harvested, sun-dried, and then roasted at high heat to produce the light, crunchy puffs you know and love.
Cultivation is deeply traditional. Farmers wade into ponds at dawn to hand-pick the spiny seed pods, a skill passed down through generations. After harvest, the seeds are dried and then "popped" in large iron woks — a process that requires years of experience to master. Bihar's Makhana has earned a Geographical Indication (GI) tag, recognising its unique origin and quality.
India produces around 40,000 tonnes of Makhana annually, with the Darbhanga, Madhubani, and Sitamarhi districts at the heart of it all. It's not just a crop — it's a livelihood for hundreds of thousands of farming families.
